Resumen
La presente investigación tuvo como objetivo general proponer la mejora del proceso productivo de la empresa Panottis SRL para aumentar la productividad. Para ello, se desarrolló una investigación descriptiva no experimental, en donde se utilizó como técnicas de recolección de datos el análisis documental, estudio de tiempos y revisión bibliográfica. Así mismo, se realizó el diagnóstico de la situación actual de la empresa, determinando que esta presentaba problemas como mermas de materiales e insumos, un cuello de botella elevado y actividades improductivas, obteniendo una baja productividad de 4,5 panes/S/., esto se traduce en una producción de 3 070 unidades/día, lo que generaba una demanda no atendida de 71 508,69 panes. Es por ello que, se desarrolló la propuesta de mejora a través del balance de línea, la estandarización de procesos, la redistribución de planta y la implementación de las 5´s, llegando a atender la demanda al 100%, disminuyendo del cuello de botella en un 5,6%, aumentando la eficiencia física en un 17,7%, la eficiencia de línea en un 66,8% y la eficiencia económica en un 17,4%. Mientras que la productividad global de la empresa aumentó en un 17,4%. Convirtiendo al proyecto en uno viable económicamente, con un costo beneficio de S/1,17, es decir que, por cada S/1,00 invertido, se obtiene S/0,17; considerando una inversión que asciende a S/9 494,87, el VAN de S/10 559,07, el TIR de 56,67% y un periodo de recuperación de 1 año 10 meses.
The general objective of this research was to propose improvements to the production process at Panottis SRL to increase its productivity. To this end, a non-experimental descriptive study was conducted, using data collection techniques such as document analysis, time study, and bibliographic review. A diagnosis of the company's current situation was also performed, determining that it presented problems such as material and input losses, a high bottleneck, and unproductive activities, resulting in a low productivity of 4.5 "loaves/S/." This translates into a production of 3,070 units/day, generating an unmet demand of 71,508.69 loaves. For this reason, the improvement proposal was developed through line balancing, process standardization, plant redistribution, and the implementation of the 5S. Demand was met at 100%, reducing the bottleneck by 5.6%, increasing physical efficiency by 17.7%, line efficiency by 66.8%, and economic efficiency by 17.4%. The company's overall productivity increased by 17.4%. This made the project economically viable, with a cost-benefit ratio of S/1.17, meaning that for every S/1.00 invested, S/0.17 is obtained; considering an investment of S/9,494.87, an NPV of S/10,559.07, and an IRR of 56.67% with a payback period of 1 year and 10 months.
