Resumen
La investigación tiene como objetivo determinar la relación entre la gestión empresarial y la cultura emprendedora en la empresa Restaurante Bahía 254, centrando el énfasis en los procedimientos rectores del negocio. Se utilizó un enfoque cualitativo con diseño descriptivo, mediante entrevistas al dueño y contador, además del análisis documental de los estados financieros. Los resultados muestran que el restaurante ha realizado inversiones significativas en la adquisición de equipos e infraestructura con la finalidad de mejorar la atención al cliente y público en general, además se pudo determinar un incremento en el costo de ventas, lo que refleja una mayor rotación de inventarios vinculada al incremento en las ventas post pandemia del COVID-19. Se concluye que la implementación de un manual de procedimientos es una herramienta clave para optimizar la gestión de inventarios y fortalecer la cultura emprendedora, aumentar la eficiencia operativa y mejorar el desempeño económico y financiero del restaurante, con impacto positivo en los márgenes de utilidad durante el periodo en estudio.
This research aims to determine the relationship between business management and entrepreneurial culture at the Bahía 254 restaurant, focusing on the business's governing procedures. A qualitative approach with a descriptive design was used, through interviews with the owner and accountant, in addition to a documentary analysis of the financial statements. The results show that the restaurant has made significant investments in the acquisition of equipment and infrastructure to improve customer and public service. An increase in the cost of sales was also determined, reflecting higher inventory turnover linked to the increase in sales following the COVID-19 pandemic. It is concluded that the implementation of a procedure’s manual is a key tool to optimize inventory management and strengthen the entrepreneurial culture, increase operational efficiency, and improve the economic and financial performance of the restaurant, with a positive impact on profit margins during the study period.
